This is the first in a series of 3 in-depth classes. Together we will dive into the world of cheddar, as we journey through the aging process and nuances of this popular cheese. We will experience and compare 4 different cheddars that have been aged for different lengths of time—1 year, 2 years, 3 years, and 4 years. We'll gain an appreciation for the subtle (or not so subtle) differences between them all.

What makes a good cheddar? 
What makes for an inferior cheddar? 
How is it aged? 
What influences the flavor? 
What are ways we can use cheddar?
